Our Process

Handpicked Perfection:

The journey of our olive oil begins with the gentle handpicking of olives at a very specific moment in time during harvest season and varies between different cultivars (types of olives). This ensures the perfect balance of flavor and aroma in the final product. It also ensures our EVOO retains low acidity < 0.8%. Olives are picked off the trees and none off the ground.

Timely Cold-Pressing:

Within just four hours of harvest, the olives are cold-pressed in a modern facility. This low-temperature process preserves the delicate flavors and health benefits of the olive oil. No chemicals or excessive heat are involved, keeping the oil in its purest, most natural form.

Untouched. Unfiltered.

Our olive oil is not filtered. Instead it goes through a decanter process, where the oil is kept for a few days so that any olive debris settles down. The resulting oil is slightly cloudy compared to filtered oil, and may contain some small sediments or cloudy bodies, however this is a testament to the natural product.

Preserving Nature's Bounty:

Our oil is bottled in tinted glass bottles, and kept in dark rooms to ensure it preserves its quality.

This meticulous process ensures that the natural antioxidants, vitamins, and other health-promoting compounds found in the olives are preserved in the final product. The resulting Extra Virgin Olive Oil boasts a superior flavor profile and delivers the full range of health benefits that truly reflects the term "liquid gold."
